Si le but était de réaliser un outil pour travailler le poisson ....En effet lame inox, sinon ça sent pas bon 😉 .....Mais sérieux un Opinel c'est mieux avec lame carbone à mon avis  🙂 

L'effilé est sympa mais c'est plus un couteau pour lever des filets de poisson qu'un poche polyvalent (lame très fine et souple). Si je retente un bricolage similaire, ce sera à partir d'un opinel "jardin" ou "classique" auquel je tenterai de donner une allure plus élégante :
